Tasting Note

A fantastic example of traditional method sparkling red wine. Rich, dark fruit, and chocolate aromas combine with a vibrant blackcurrant palate, complemented with spicy notes of aniseed and pepper. On the palate, the sweetness has married perfectly with silky tannins from the Pyrenees to produce a long, velvety, cedary-oak texture. The wine was aged in French oak barriques for 10 months and 14 months on lees to further develop the wine and add to the creamy palate.

Pair with Chocolate/Cherry Mud Cake, also works beautifully with roast poultry and baked ham.

"Sparkling Shiraz is a true Australian wine style. It has all the sweet, rich fruit of a good shiraz with lots of bubbles and no tannins. They're incredibly fun to drink and retain a great depth of flavour. Perfect with chocolatey desserts."

Owner John Goelet, a direct descendant of the Guestier wine merchant family of Bordeaux, discovered and purchased Taltarni Vineyard after conducting a worldwide search for a site comparable to the great vineyards of Bordeaux.
